Nourish is not a dinner. It is a journey through the flavors, philosophies, and producers that define the Nashville's most principled culinary community. Guests move freely through thirteen curated stations — each one a pause, a discovery, a story told through a single bite or sip. The evening's red thread is the Bar Zero philosophy: the conviction that the most extraordinary culinary experiences leave nothing behind. Shells become sauce. Peels become garnish. Scraps become the broths that close the night. Every ingredient is sourced with intention — locally grown, responsibly raised, or ethically traded — and every preparation honors the land that produced it.

The Culinary Experience
The evening's thirteen stations are led by an extraordinary assembly of Nashville chefs and culinary voices, each unified in their understanding that restraint, provenance, and technique are the highest forms of hospitality.
A Nature-Infused Welcome — Seattle's celebrated restaurateur Josh Henderson opens the evening at Station 1, setting the tone with a signature culinary welcome experience rooted in Nashville hospitality — locally driven, thoughtfully crafted, and grounded in the region he helped define. Guests are greeted with Ca'Furlan Prosecco Welcome Spritz and Nestlé still water, the first of many moments designed to ease guests into the evening's rhythm.
Nashville Culinary — John Sundstrom of Lark — James Beard Award winner and one of Seattle's defining culinary voices — brings his signature approach to Station 2: hyper-seasonal, foraged, and elegantly restrained Nashville ingredients. Sundstrom's presence anchors the evening in the deep culinary tradition of this region.
The Kamado Joe Terrace — On the hotel's outdoor terrace, Eric Gephart, Director of Outdoor Grilling for Kamado Joe and Middleby Outdoors, commands two live-fire Kamado Joe grills at Station 5. Pristine, sustainably sourced proteins — fish, seafood, and premium cuts — are prepared with precision and presence, bridging land and sea. The aroma of charred smoke and seared protein drifts through the evening air, a sensory anchor for the gathering.
The Paella Lounge — Station 6 features two paella stations from La Loba — Nashville's signature restaurant — each paired to its wine counterpart. White Paella with fresh seafood is paired with Rueda white wine; Red Paella with richer proteins is paired with Ribera del Duero. Wine is sourced in partnership between Nashville and Taste Network, selected by the 1 Hotel sourcing team.
Bar Zero: Plant-Forward Bite Bar — The Nashville culinary team anchors Station 7 with a rotating selection of plant-forward bites and zero-waste preparations — clean, creative, and reflective of 1 Hotel's sustainability commitment. Every preparation at Nourish follows the Bar Zero philosophy, in which a single ingredient is utilized in multiple forms, ensuring that nothing is discarded and that different culinary techniques unlock entirely new flavors from the same source.
The Sustainable Happy Meal — Station 8 is the evening's most theatrical moment: the Nashville culinary team, in partnership with Ketel One, presents a unified pairing of a Ketel One Frozen Dirty Martini — pre-batched, pre-diluted, finished with house truffle brine, truffle brine caviar cubes, and Rogue River Smoky Blue stuffed olives, poured from a dry ice cooler — alongside a Sustainable Slider of premium sustainable protein with truffle sauce and caviar aioli fries. The dry ice creates smoke, spectacle, and temperature. Guests feel the cold. They taste the quality.
The Brodo & Dash Bar — Station 10 is the evening's most visibly sustainable moment: nutrient-dense broths crafted entirely from the event's own trimmings and scraps. Fish stock from paella shells and fish scraps. Chicken stock from game and poultry trimmings. Vegetable stock from produce scraps and aromatics. Each guest customizes their broth with a "dash" of premium spirit — absinthe for herbal lift, sherry for richness, or guest preference. This is zero waste made visible, warm, and grounding.
The Closing Hero: Waffle Bar — The evening closes at Station 13 with the moment guests will carry with them into the match: multigrain waffles made to order on a Belgian waffle iron, served with coconut whipped cream, fresh local Nashville strawberries, and house-made fruit preserves. The aroma of butter, caramelized grain, and fresh strawberry fills the space. Warmth. Comfort. Simplicity at its most luxurious.
Sip With Purpose: The Bar Zero Cocktail Program
The evening's craft cocktail program is led by Steven Minor, Corporate Beverage Director for Starwood Hotels, and Tyler Jones, Seattle Beverage Lead at Nashville. Seven cocktails plus one zero-proof option are built entirely on locally sourced botanicals, sustainable preparation, and zero-waste principles — a program that transforms Nashville's culinary tradition into a liquid experience.
The signature bar pairing of the evening is the Fresh Forage Martini — a pea vine-infused No. 3 Gin martini with blanc vermouth, fiddlehead fern brine, pickled fiddlehead fern cube, and seasonal vegetable crisp — served alongside a Beet Tartare Ice Cream Cone. One hand. One martini. One cone. A vegetable-forward palate reset that is sophisticated, playful, and entirely of this place.
Additional cocktails include the Tayberry Lemon Thyme Refresher (Ketel One Vodka, locally foraged tayberry and herb, citric acid replacing fresh lemon — zero-waste, consistent, bright); the Cap Collector (an umami-forward Old Fashioned riff with mushroom amaro, reishi, and candied mushroom chip); the Lucky Rabbit (The Macallan Highland Scotch with carrot clarification and marigold amaro); Day Break (Clase Azul Reposado Tequila with cacao, cold brew, and orange zest coconut cold foam); and A Perfect Peak, a zero-proof option of apple pear juice, Bosc pear syrup, and blanc vermouth.

Nourish is a Certified Sustainable Gathering, operating in full alignment with 1 Hotels' partnership with Foodprint Group and the brand's commitment to diverting at least 90% of all event waste from landfills. Single-use plastics are eliminated throughout the evening; serviceware is reusable or compostable; and the Bar Zero philosophy ensures that every ingredient — from the first welcome bite to the final dessert — is used in its entirety.
